This isn't my first time at the egg white rodeo, but it's always an adventure, though a worthwhile one. If you've never tried it, worry not: there's no sign of slimy egg white in the final product, just a welcome froth and body in the drink. And I have yet to die from using raw egg white, which though anecdotal evidence, is good enough for me. In the end, this is a pretty tasty beverage - the sour is a perfect match for the sweetness of the Amaretto, letting the flavours speak for themselves without being cloying.
